Raspberry Chocolate Overnight Oats Recipe

These raspberry chocolate overnight oats are a decadent way to start the day with a sweet but tart edge.

What are overnight oats?

Overnight oats are basically just your regular breakfast oats that have been soaked overnight in a liquid of your choosing. In this version I just used regular dairy milk however this can be easily substituted in for almond milk, oat milk or even soy milk to make a vegan friendly version.

By leaving the oats to soak overnight in the liquid of your choosing they soften while, they become soft while still keeping all of their nutritional value while the liquid becomes thicker and creamier in the process.

There are so many reasons to love these raspberry chocolate overnight oats. We love because:

  • They are no cook! I don’t know about you but my family is always on the go. Sometimes it is nice to have a recipe that you can just mix together the night before and serve the following day without worrying about cooking or washing up. 
  • There is minimum prep – stir the ingredients and go! I like to present the top of my overnight oats more artfully, but if you are super rushed then missing this step won’t affect the overall taste.
  • Easy to adjust – I’m usually making my overnight oats for 2 or 4 people. This recipe serves two but it is so east to double or half these ingredients to make the required amount.
  • They are a great meal prep breakfast. Sometimes I like to get ahead on a Sunday night and line up my meals for a busy week. As overnight oats keeps in the fridge for 3 days, I like to make my breakfasts for Monday through Wednesday on a Sunday night!
  • Easy to customise – it is really easy to add or take away flavors in any overnight oats so if you have a fussy eater in your house it is easy to amend this recipe to suit their taste!

Ingredients

  • Rolled Oats (these are the best type of oats to use for overnight oats)
  • Milk – you can use milk of any variety. I used semi skimmed milk but you can use vegan alternatives should you wish to make a dairy free version. 
  • Yogurt – I used natural Greek Yogurt but vegan alternatives can be used to make dairy free versions. 
  • Raspberries
  • Cacao Nibs

Instructions

Add oats into a mason jar.

Add in the milk and stir the mixture.

Layer with raspberries and and yogurt.

Top the mixture with the cacao nibs

Put on lid and place in fridge overnight.

Substitutions & Variations

Want to try something different? Here are some options.

  • Yogurt – you can use flavored yogurt such as vanilla yogurt however I find it a bit overpowering for this mixture.
  • Vegan – to make these vegan overnight oats substitute the dairy yogurt and milk with vegan alternatives such as almond, coconut or oat to make a delicious vegan alternative. 
  • Chia Seed Jelly – instead of raspberries you could use our raspberry chia seed jelly.
  • Nutella – for a fullier chocolate flavour why not add Nutella into the oats and milk mixture as a substitute for the cacao nibs. 

Storage

Store in fridge and consume within 3 days for optimal texture.

If you leave the oats for the full 3 days you may find you need to add an extra tablespoon of yogurt into the mixture to get the right consistency. 

These ingredients don’t stand up well to freezing.

Raspberry Chocolate Overnight Oats

These raspberry chocolate overnight oats feel like a treat breakfast but are actually a great healthy start to the day!

Ingredients

  • 1 cup rolled oats
  • 1 cup milk, of your choice - we used semi-skimmed but feel free to substitute for plant based milks.
  • 1 cup of Greek yogurt
  • 1 cup of Raspberries
  • juice from half a lemon
  • 1/4 cup of sugar
  • tablespoon of Cacao Nibs

Instructions

    1. Heat raspberries, water and sugar in. a saucepan over a low heat. Stir occassionally. Simmer for 10 minutes.

    2. Add lemon juice and take off the heat.

    3. Set aside to cool.

    4. Add oats into a mason jar.

    5. Add in the milk and stir the mixture. 

    6.. Layer with raspberries coulis (once fully cooled) and and yogurt.

    4. Top the mixture with the cacao nibs

    5. Put on lid and place in fridge overnight.
